De las Sabias y Dementes is an artisanal mezcal made in a sustainable and environmentally friendly way in the Palenque 5 Estrellas, located in Santiago Matatlán, Oaxaca.
Family business that fights to preserve and keep alive the mezcal tradition of 3 generations, led by the young master mezcalero Lorenzo Martínez Monterroza and his sisters Magda, Angela and Mextli, who with their wisdom, experience and love in the process, give their distinctive and authentic flavor to our mezcal.
De las Sabias y Dementes is made in small batches, ensuring that each bottle is of the highest quality, being a true representation of the art in mezcal production in Oaxaca, which we are proud to share with the world.
How do we do it?
HARVEST AND COOK
The process of production starts with the selection of mature agaves, previously harvested and then transferred to the Palenque. The “pineapples” are cut into pieces to facilitate the cooking process which is carried out in a conical stone oven with oak wood and volcanic rocks, which are covered with bagasse and dirt. The cooking process lasts between 3 to 5 days.
GRINDING AND FERMENTATION
Once the pineapples fulfill their cooking process, the grinding process continues, this is made in a tahona type windmill of pink quarry. With the help of a horse, the middle stone spins to grind the cooked agave and extract the juices for the next step; the fermentation, carried out in pinewood barrels, being a spontaneous fermentation for the autochthonous microorganisms of the Palenque.
DISTILLATION
Once the fermentation reaches its final stage the distillation process of the must in copper and stainless steel stills begins. The mezcal “De las Sabias y Dementes” goes through a double distillation process to achieve the flavor that characterizes the brand, for then to be bottled at a 36% Alcohol volume graduation to keep its softness and subtlety.
